Grandma Earlene's Chicken Casserole

Chicken Casserole


1 box elbow macaroni
2 c milk
1 can crm of celery soup
1 can crm of chicken soup
2 c chicken - diced (deli chicken is best)
1/2 lb shredded cheese (maybe more)
Potato chips

Cook macaroni and drain. Place in layers in a buttered baking dish in this order:
chicken, soup, cheese. Top with crushed potato chips. Add milk. Leave overnight in fridge.
Remove 1 hour before baking. Bake 1 hour at 350 f.

Fettuccine Alfredo

Serves 4-5

Ingredients:

1/2 cup butter (1 stick)
2 cloves of minced garlic
2 cups of heavy cream
1/4 teaspoon ground white pepper
pinch of salt
1/2 cup of parmesan cheese - Sargento brand
1/2 cup mozzarella, asiago, romano (Italian blend) - Sargento brand

Fettuccine noodles (I use 2 of Buitoni brand 9 oz fresh)- cook following package directions. Drain.


Melt the butter in a medium saucepan over medium to low heat.
Add garlic, cream, pepper, salt and bring to simmer. Turn down heat if the mix reaches a rapid boil or it could boil over in the pan.
Add the cheese and continue to simmer sauce for 8 minutes or until thick.
Mix noodles with sauce.
Add cooked chicken, salmon and/or mushrooms.
Top with basil or scallions (optional)
